Chocolate Cupcakes

These chocolate cupcakes are simple and easy to make. They are soaked overnight in order to neutralize phytic acid, which makes them more digestible and nutritious. If you’d like these cupcakes to have a richer, more chocolaty flavor just add a little pure chocolate extract to the batter before baking. Frost them with either Dark Chocolate Ganache for a decadent treat OR Whipped Cream-Cheese Frosting, they taste great both ways (whipped cream-cheese is shown in photo).

Vanilla Cupcakes

These vanilla cupcakes are simple and easy to make. They are soaked overnight in order to neutralize phytic acid, which makes them more digestible and nutritious. Frost them with either Dark Chocolate Ganache OR Whipped Cream-Cheese Frosting, they taste great both ways (chocolate ganache is shown in photo).

Whipped Cream-Cheese Frosting

This whipped cream cheese frosting is a wonderful light and fluffy frosting, perfect for chocolate, carrot, or spice cakes. I like to top it with finely shredded unsweetened coconut for a special touch. Another great use for this “frosting” is as a delicious dip for fresh fruit.

Dark Chocolate Ganache Frosting

Chocolate Ganache is so easy to prepare, yet it makes cakes/cupcakes taste so decadent. Not to mention it is so versatile. Use it as a glaze to pour over a cake or a whipped frosting to pipe or spread on top of a cake…..either way it is delicious!

Strawberry Shortcake “Drop” Biscuits

Strawberry Shortcake is one of my favorite desserts, yet it is so simple to make. There are many ways to prepare “strawberry shortcake”, but I like to take the easiest route…drop biscuits. The flour is soaked before making the biscuits, so we can get all the nutrients possible out of this yummy dessert.

“Naturally Sweetened” Cocoa-Peanut Butter Bites

These little cocoa-peanut butter bites are a great snack. Stored in the freezer, you can grab one anytime you feel like it. And the great thing is that they are naturally sweet, with no added sugar or sweeteners. For a special touch, roll them in finely shredded unsweetened coconut before freezing.
