Crockpot Beef & Cabbage Casserole *

Growing up my Mom would make stuffed cabbage…little rolls of cabbage with a ground beef/rice mixture tucked inside and a yummy tomato sauce poured over top. It was one of my favorite meals as a kid. This is my take on a quicker/easier way to get that same deliciousness. Just put everything in a crock-pot and allow it to cook slowly, letting the flavors meld together, gently. It is sooooo good, especially if you serve it over some hot cooked brown rice. Tastes just like Mom’s…only easier :)

Slow-Cooker Barbecue BBQ Beef

This slow cooker/crock pot BBQ recipe is great for a Sunday lunch, or early dinner. Everything is cooked in the slow cooker for 6 to 8 hours, so you don’t have a lot of work to do…you can rest and relax on your Sabbath but still enjoy a great meal. If you don’t have a lot of time in the morning to put everything in the crock pot, you can do it the night before….simply place everything in the crock pot container, cover with the lid, and place in the fridge. The next morning (6 to 8 hours before you want to serve the meal) just take the container out of the fridge and place into your slow cooker/crock pot base, cook as normal. Serve inside whole-grain sprouted rolls, soaked/sprouted tortillas, or over cooked brown-rice, with a simple side-salad. My husband prefers the roll/tortilla and my kids and I prefer the rice; both with a little shredded cheddar cheese on-top…..Yummy!

Italian Scalloped-Potato & Beef Casserole

This casserole is so hearty and filling. It is just the kind of meal that my husband loves…meat and potatoes. Serve this with a simple side salad drizzled with olive oil and balsamic vinegar. This casserole can also be cooked in the crock pot if you have a busy day ahead…simply follow the crock pot/slow cooker instructions.

Beef & Mozzarella Stuffed Peppers *

These stuffed peppers may not seem like a lot when you look at them, but they are incredibly filling……..oh and they taste really good too :) There are filled with a beefy-cheesy tomato sauce mixture that is so good you’ll want to eat it up even before you fill the peppers. Serve these with a very simple side salad of mixed spring green lettuce, drizzled with extra-virgin olive oil and balsamic vinegar. Delicious!

Sweet Potato Shepherd’s-Cottage Pie

This “shepherd’s pie” or “cottage pie”, whichever you prefer to call it, gets a boost of Vitamin A from the sweet potato topping. It is full of ‘good for you’ veggies, and tastes great….even picky eaters will love it. You can easily customize this dish by adding which vegetables you prefer in the amounts you prefer. It can be made with ground lamb, giving it the name “Shepherd’s Pie”, or with ground beef, giving it the name “Cottage Pie”……..all this silly name stuff aside, whatever you call it, it’s delicious!

Spicy Southwest Fajita Stew *

This soup makes a great hearty meal. You can control the spicy-ness of this soup by the salsa you choose and whether or not you use the dried jalapeno peppers. Try serving this soup with some Texas Skillet Bread….yummmm!
