Easy Creamed Corn

This creamed corn is easy to make and tastes delicious. It is a great side-dish with most meals. You could also use this as a base for a yummy corn chowder. Just add other steamed vegetables of your choice and some chopped-cooked-chicken if desired, ,and you have a wonderful complete meal.

Sweet Potato Oven Fries

If you’ve never tried sweet-potato fries before, then you have been missing out. These little fries are sooooo good, and better for you than “regular” fries. They are crunchy-salty on the out-side with a slightly soft-sweet center. Everyone in my family absolutely loves them!

Spaghetti-Squash Primavera *

This spaghetti-squash primavera is great as side dish with a meal; it would be equally as great for meal by itself….it is very filling. If using this recipe for a complete meal by itself, I would double the recipe (if it’s to serve more than 2 people). Don’t forget to sprinkle each serving generously with fresh grated Parmesan cheese.
