Banana-Chocolate Chip-Nut Muffins

These muffins make great little ’special’ treats for kids (or the kid in all of us:)). Use at least 60% cacao chocolate chips (70% is even better) as they have much less refined sugar. You can even omit the chips all-together and add more nuts and/or raisins, or even dried apricots are great as well. You really can change the add-ins to suit your taste.

Whole Grain Banana Bread

This banana bread is made with whole grain spelt flour, and lightly sweetened with honey and stevia. So it is much better for you than traditional banana bread. Soaking the flour overnight (12 hours) in a yogurt/milk mixture breaks down the anti-nutrients found in grains, makes them easier to digest, and more nutritious.
Sourdough Banana Spice Bread

This bread is so moist, with the sweet taste of bananas and a hint of cinnamon and nutmeg. Serve each slice with some butter on top and you have a great snack or dessert even.
