These baked oatmeal squares are easy to make, and can be topped or filled with any fruit you like. When serving these, for an extra special touch top each square with a pat of real butter and a light drizzle of maple syrup.

Blueberry-Buckwheat Mini Muffins

These muffins were inspired by my favorite pancakes……blueberry buckwheat pancakes with real maple syrup. Mmmmm! they are so good…..and these little muffins are no exception. They are lightly sweetened with real maple syrup and stevia, and full of juicy blueberries.

Lemon-Blueberry Coconut Flour Muffins *

These muffins are made with coconut flour, which is high in fiber and protein. The lemony flavor of these muffins combine with the blueberries so well. These are by far my favorite coconut flour blueberry muffin recipe.
