Lacto-fermented “Sweet & Spicy” Pickles

These pickles are slightly sweet with just a hint of spicy-ness. They taste similar to a bread and butter style pickle, but with the added benefits of lacto-fermentation. The bad thing about these tasty pickles are that they never seem to last in my house… they get eaten up so quickly. I just may have to lock the kids out of the refrigerator so that I get to eat more than just a few slices of these :) (Well, at least I know these pickles are so good for them… so really it’s a good thing that they enjoy them so much.)

Lacto-fermented Roasted-Tomato Salsa *

This salsa is a major favorite of our family, we put it on everything from tacos and burritos to scrambled eggs. You can adjust the heat and seasonings in this salsa to your tastes.

Creamy “Homemade” Buttermilk Ranch Dressing *

Homemade dressings are always so much better. They taste better AND they are a much healthier option. This homemade creamy ranch dressing is no exception. Adjust the spices/seasonings to suit your taste. For a zestier/semi-spicy dressing, I sometimes add a little ground cayenne pepper to the dressing. This dressing can also double as a dip for fresh veggies.

Lacto-fermented “Pickled” Green Beans *

These pickled green beans make a tasty snack anytime of the day…they have a wonderful garlicky taste and are a great little “finger-food”. I like to grab a few straight from the jar and munch on them….betcha’ can’t eat just one ;)

My husband really loves “pickled” jalapeno pepper slices. I wanted to find a way to make them for him that was a healthier option…but one that he would still enjoy. Well he really loves these…especially on his pizza (sourdough of course :) ) And they are so easy to make…..I know lacto-fermentation sounds hard, but it really is easy.

Homemade Mayonnaise *

Homemade mayonnaise is quite easy to make and tastes delicious! I like to make mine in the food processor, it is extra easy that way and you will have homemade mayo in no time. So why buy the chemically adulterated mayonnaise at the store, when you can make your own using healthy unrefined oils and farm-fresh eggs. Commercial mayo doesn’t have much of anything going for it nutritionally. While on the other hand, the homemade mayo has live enzymes, good fats, and proteins. So which mayonnaise do you choose? I know what I choose :)
