Homemade Yogurt “The Easy Way”

Yogurt is a super-nutritious food, full of beneficial bacteria (Probiotics). Especially “homemade” yogurt, as most store-bought yogurts contain some sort of additives and/or thickeners-stabilizers.

We use yogurt a lot around here for making smoothies, eating plain (or with fruit) for a snack or great breakfast, and in the summer we make creamy yogurt popsicles. There are [...]

Creamy “Homemade” Buttermilk Ranch Dressing *

Homemade dressings are always so much better. They taste better AND they are a much healthier option. This homemade creamy ranch dressing is no exception. Adjust the spices/seasonings to suit your taste. For a zestier/semi-spicy dressing, I sometimes add a little ground cayenne pepper to the dressing. This dressing can also double as a dip for fresh veggies.

Crockpot Potato, Chicken, & Corn Chowder

This hearty. creamy potato chowder is especially wonderful on a chilly day. The soup gets its richness from the cream cheese that is gently melted in at the end of cooking. You can fill this delicious soup with any of your favorite vegetables such as corn, peas, carrots etc. (even broccoli would be good). Since the soup is simmered on low, in the crock-pot, all day it makes for an easy fix-it and forget it meal.

Italian Scalloped-Potato & Beef Casserole

This casserole is so hearty and filling. It is just the kind of meal that my husband loves…meat and potatoes. Serve this with a simple side salad drizzled with olive oil and balsamic vinegar. This casserole can also be cooked in the crock pot if you have a busy day ahead…simply follow the crock pot/slow cooker instructions.

Creamy White-Bean Chicken Chili *

This chili is different from your everyday chili recipe for sure. But it is so good, you will be putting it on your list to make again and again. Everyone from kids to adults will love this dish and ask for more. And the great thing is that it is quick & easy to prepare. For an extra richness and creaminess add the heavy cream as called for in this recipe….otherwise feel free to leave it out.
