Sour Cream & Onion Dip *

Who wants to eat the chemical-preservative laden store-bought dip, when you can make this homemade sour cream & onion dip at home…considering how easy it is. Every time I make this dip it gets eaten up the same day…within hours of making it actually. We eat it with anything from homemade potato chips to raw veggies, such as carrot or celery sticks.

Coconut Flour Chocolate Chip “Mini” Pound Cakes

These little pound cakes are a great grain-free treat, perfect for Easter celebration or anytime. They are made with naturally sweet coconut flour, filled with shredded coconut, and kissed with chocolate chips. My kids especially love these little loaves…. their words exactly, “They’re yummy!” :)

Ginger-Almond Cookies

These grain-free cookies are great with a cold glass of milk or a hot cup of tea. I love them, as well as do my children. Rolling the cookies in maple sugar (or rapadura) before baking gives them an extra crunchiness on the outside…not to mention just adds that special festive touch. Great for the holidays! The cookies are fairly easy to make, as everything is done in the food processor. Quick and easy :)

Quinoa & Black Bean Pilaf

Quinoa is not technically a grain, but the seed of a plant. You can use quinoa where ever you would normally use rice or couscous. Quinoa naturally has a coating of saponin, a bitter taste, which deters insects and birds. Rinsing the quinoa well with warm water is important to remove the saponin. Serve this quinoa recipe as a delicious hot pilaf, or a scrumptious cold salad.
