Coconut Flour Chocolate Chip “Mini” Pound Cakes

These little pound cakes are a great grain-free treat, perfect for Easter celebration or anytime. They are made with naturally sweet coconut flour, filled with shredded coconut, and kissed with chocolate chips. My kids especially love these little loaves…. their words exactly, “They’re yummy!” :)

These mini-loaves of orange-glazed cranberry bread make terrific gifts during the holidays. They look so pretty and shiny from the glaze on top and they taste so wonderful that the lucky recipient won’t even realize how healthy they are ;) This recipe should make 4 to 5 mini-loaves, depending on the size of your pans and how much you fill them.

These grain-free cookies are great with a cold glass of milk or a hot cup of tea. I love them, as well as do my children. Rolling the cookies in maple sugar (or rapadura) before baking gives them an extra crunchiness on the outside…not to mention just adds that special festive touch. Great for the holidays! The cookies are fairly easy to make, as everything is done in the food processor. Quick and easy :)

This eggnog is spiced “just right” and it’s healing diet approved…..there’s no sugar in it and it still tastes great. You’ll be wanting glass after glass of this creamy concoction. I know my kids sure love it!

Spicy Pumpkin Butter *

This spicy pumpkin butter is great spread on toast with butter or mixed into plain yogurt…..and I’m sure there are so many other ways to enjoy it too :) Place the pumpkin butter in a decorative jar and give away as a gifts for the holidays. If you are not on a sugar-restricted diet (such as the Maximized Living Advanced Healing Diet), you may sweeten with up to 1/4 cup dark muscovado sugar in place of the stevia. Feel free to adjust the spices to your taste.
