Holiday Blender Pancakes (Gingerbread or Pumpkin)

Looking to cook up some de-licious pancakes this holiday season, but don’t want the same old thing?! Try one of these holiday blender pancake recipes featuring two flavors, one of gingerbread and one of pumpkin. Both are super tasty and a cinch to whip up using your blender. Try topping with any of the following – real maple syrup, fresh whipped cream, chopped pecans, or some cranberry-vanilla syrup……Yummmm!

Cranberry-Vanilla Syrup

This cranberry-vanilla syrup is great over pancakes, ice cream, etc. I love it with pumpkin pancakes at Thanksgiving & Christmas time….it’s soooooo delicious! This recipe is easily doubled if needed.

Blueberry-Buckwheat Mini Muffins

These muffins were inspired by my favorite pancakes……blueberry buckwheat pancakes with real maple syrup. Mmmmm! they are so good…..and these little muffins are no exception. They are lightly sweetened with real maple syrup and stevia, and full of juicy blueberries.

Easy Maple-Blueberry Steel Cut Oatmeal

Steel cut oat meal is a great breakfast. It’s very satisfying, easy to make, and tastes delicious. Soaking the oats in a water-lemon juice mixture overnight brings out their nutrients and makes them easier to digest. When serving, feel free to add other toppings if you wish….the possibilities are endless. See the end of the recipe for other topping suggestions.
