These chicken chili roll-ups are very rich and satisfying. The degree of spicy-ness depends on the chili’s used. Making sure to rinse the chili’s well, scrape out all seeds, and cut out all membranes will remove most of the heat. Anaheim chili’s are my favorite chili to use for these chicken roll-ups, they are a very mild chili and go great in this recipe. Poblano chili’s are another mild chili that would work well in this recipe as well. My kids enjoy this meal served with black beans and a little dollop of sour cream on the side.

Why buy pre-packaged taco seasoning when you can make your own? It’s simple to mix up and made with common spices you probably already have on hand. Not to mention, it doesn’t include un-necessary ingredients like MSG and partially hydrogenated soybean oil (yuck!). You can use this seasoning blend in tacos, burritos, Mexican rice, and more.

This pepper-jack cheese smothered chicken is quick to prepare and bursting with flavor. Serve this with a side of cooked black beans, or re-fried black beans and some sour cream, and you have a great meal with a kick!
Spicy Southwest Fajita Stew *

This soup makes a great hearty meal. You can control the spicy-ness of this soup by the salsa you choose and whether or not you use the dried jalapeno peppers. Try serving this soup with some Texas Skillet Bread….yummmm!
Southwestern “Mexican” Meatloaf
Spice things up with this southwestern “mexican” meatloaf for your next meal. Serve it with black beans and your favorite vegetable on the side. A little sour cream is good with the meatloaf as well. You can adjust the heat (spiciness) of this meatloaf by decreasing/increasing the amount of jalapeno used. Also, to make this healing diet friendly just omit the corn in this recipe.

This steak is so tender and flavorful, even the kids like it. (Which is something, because at least in my house, I know kids and steak don’t usually go well together.) This dish is very easy to make. I think the marinade would also do well with chicken breast instead of beef.
