Simple Guacamole Dip *

This is guacamole dip is quick and easy to make. It’s perfect to make for a fast, yet satisfying snack. Forget the chips, and instead go for the healthier option…cut up veggies. Sweet bell peppers are great in this dip, and the avocado gives you a boost of healthy fat.

Crockpot Potato, Chicken, & Corn Chowder

This hearty. creamy potato chowder is especially wonderful on a chilly day. The soup gets its richness from the cream cheese that is gently melted in at the end of cooking. You can fill this delicious soup with any of your favorite vegetables such as corn, peas, carrots etc. (even broccoli would be good). Since the soup is simmered on low, in the crock-pot, all day it makes for an easy fix-it and forget it meal.

Multi-Bean & Vegetable Soup *

This multi-bean vegetable soup makes a hearty and delicious meal. Just put it the crock pot and let it simmer all day, it will fill your house with wonderful smells, and by dinner time you will be so hungry for this soup. This soup contains no meat, though feel free to add some cooked sliced beef sausage if you wish. If you don’t have a crock-pot, you can still make this soup…simply follow the instructions below, using a large stock pot, simmering on a low stove-top for 2 to 2 1/2 hours until the beans are tender. This soup is great with Texas Skillet Bread or Homemade Spelt Biscuits.

Easy Creamed Corn

This creamed corn is easy to make and tastes delicious. It is a great side-dish with most meals. You could also use this as a base for a yummy corn chowder. Just add other steamed vegetables of your choice and some chopped-cooked-chicken if desired, ,and you have a wonderful complete meal.
