Brown-Rice & Coconut Milk Pudding

The coconut milk in this whole-grain dessert lends a richness and also a sweetness (along with the raisins). Which in turn lessens the need for a lot of extra sweetener. This is a very simple, yet satisfying dessert that anyone would enjoy.

Whole-Grain Oatmeal Raisin Muffins

These whole-grain oatmeal raisin muffins are reminiscent of an oatmeal cookie. They are deliciously soft and delicate with a touch of spice, made with whole grains, and sweetened with honey.

Blueberry-Buckwheat Mini Muffins

These muffins were inspired by my favorite pancakes……blueberry buckwheat pancakes with real maple syrup. Mmmmm! they are so good…..and these little muffins are no exception. They are lightly sweetened with real maple syrup and stevia, and full of juicy blueberries.

Whole Grain Banana Bread

This banana bread is made with whole grain spelt flour, and lightly sweetened with honey and stevia. So it is much better for you than traditional banana bread. Soaking the flour overnight (12 hours) in a yogurt/milk mixture breaks down the anti-nutrients found in grains, makes them easier to digest, and more nutritious.

Whole Grain Mini Apple-Cinnamon Scones

These little bite-sized scones are lightly sweetened with honey and stevia, full of diced bits of apple, and topped with cinnamon. Bring these little bites to a brunch or party, they are sure to be a hit. The scones benefit from and overnight soaking, which in-turn will benefit you and your family’s health.
