Brown & Wild Rice Pilaf

This Brown & Wild Rice Pilaf is a great side dish, as it makes any meal seem extravagant. Pair it with a simple cooked, seasoned chicken breast and your favorite veggies…….a simple wonderful, and tasty meal 🙂

Just as soaking nuts and grains makes them easier to digest and just overall better for you, so is the same with rice. Soaking for 7 hours or overnight brings out the nutrients and also gives the rice better flavor and texture. It is easy to do. Just soak the rice in plenty of warm filtered water, to cover, and add 1 Tbsp. of lemon juice or raw vinegar, along with 1 Tbsp. whole wheat or spelt flour; cover the bowl and let soak. After soaking, drain the rice and cook as you would normally.

  • 2 Tablespoons butter
  • 1/2 cup onion, chopped
  • 1 stalk celery, diced small
  • 1/2 cup mushrooms, chopped
  • 1/4 to 1/2 teaspoon unrefined sea salt, to taste
  • 2 teaspoons Italian seasoning, or your favorite combination of dried herbs
  • 1/2 cup brown rice
  • 1/4 cup wild rice
  • 2 cups chicken broth

Melt butter in a 2-quart saucepan over medium heat; add onion, celery, mushrooms, salt, and Italian seasoning and saute 5 minutes. Add brown rice, wild rice, and chicken broth; bring to a boil, reduce heat to low, cover and simmer for 40 to 50 minutes, or until rice is tender and most of the liquid has been absorbed.

Serves 4 to 6.
