I always make extra batches of this “grainless” granola and keep it in my pantry in a sealed air-tight container. It makes it a quick and easy breakfast when you’re in a hurry.
- 1/2 cup golden flax seeds
- 1/2 cups sunflower seeds, shelled
- 1/2 cup raw almonds
- 1/2 cup dehydrated coconut flakes, unsweetened
- 3/4 tsp ground cinnamon
Process all ingredients in a food processor on high, until nut and seeds are reduced to a grain-like texture; about 1-2 minutes, checking often. Once the texture you want is achieved, add cinnamon and process until mixed through; a few short pulses will do the trick.
Serving size is 1/4 to 1/2 cup. Serve cold or warm with milk and sprinkle with blueberries, if desired.
Makes 4 to 8 servings.
