Lesson 7: Whey, Greek Yogurt, & Yogurt Cheese

Now that we have learned how to make yogurt from the last lesson, lets talk about all the wonderful things that can be made from our new yogurt.

Getting whey from your homemade yogurt is so easy! You can use it to culture "cooked" vegetables, like roasted peppers and beans or make fermented ketchup or mustard.

Whey… you’ve heard of it, think "Whey Protein Powder"… only your homemade whey will be so much better than the powdered stuff sold for expensive amounts at stores.

Your homemade whey, also has:

  • The lactose proteins broken down better than commercial whey, making it easier on the digestive tract. (This could help people who have dairy issues, but they will have to test these products as to how they are affected.)
  • "Live" probiotics, just like your yogurt, and is able to be used in multiple ways – such as lacto-fermentation of cooked vegetables and condiments.

Extra whey you have may be added to shakes as this whey still has the live high probiotic counts just like the yogurt. This is often missing from store bought protein whey powders.

As an added plus, when you make whey from your homemade yogurt, you will also obtain Greek Yogurt or Yogurt Cheese (a rich cream cheese-type substitute). Yogurt cheese can be easily made into delicious sweet or savory dips for vegetables or fruits… Can you say yummm!
