Easy, Healthy, Blueberry Sorbet *

This sorbet is a lovely treat that you do not have to feel guilty about “treating” yourself to. Sweetened with stevia, which adds no extra calories, it is a very healthy frozen dessert. You can, if so inclined, sweeten with honey if you are not on a sugar-free diet :)

  • 3/4 cup filtered water
  • 1/4 cup lemon juice
  • 3/8 teaspoon NuNaturals NuStevia™­ White Stevia™ Extract Powder
    OR if not on sugar-free diet – 1/4 to 1/3 cup honey
  • 1 Tablespoon arrowroot powder
  • 4 cups fresh or frozen (partially thawed) Blueberries
  • 1 large egg white, preferably farm-fresh

In a 2-cup glass measuring cup whisk together the water, lemon juice, stevia powder (or honey – if not on a sugar-free diet), and arrowroot until combined and no lumps remain. Set aside.

In a blender, add the half of the blueberries and half of the lemon juice mixture. Blend until very smooth. Add mixture to ice cream maker. Repeat with remaining blueberries and lemon juice mixture.

Freeze in ice cream maker according the manufacture’s instructions. In my Cuisinart 1-1/2 Quart Ice Cream Maker it takes about 15 minutes if I use partially frozen berries. (With fresh berries it takes slightly longer.) Add the egg white during the last few minutes of churning. Enjoy right away or place in a freezer-safe container with a lid and freeze for 2 hours, or more, for a firmer consistency.

Makes slightly more than 1 quart.
