Pickling Spice *

Use this handy spice mix where-ever a recipes calls for “pickling spice”. I like to use it a lot in my lacto-fermenting….especially pickles, whether they be the sweet or dilly kind.

  • 1 Tablespoon black peppercorns
  • 1 Tablespoon mustard seeds
  • 1 Tablespoon coriander seeds
  • 1 Tablespoon hot red pepper flakes
  • 1 Tablespoon allspice berries
  • 1 tablespoon whole cloves
  • 1 1/2 teaspoons ground mace
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon celery seed
  • 1/2 teaspoon ground cinnamon (or 1 small cinnamon stick broken into pieces)

Combine all spices in a small jar or other container. Store in tightly sealed in a cool-dark place.

Makes 1/2 cup.
