Healthy Foods Gone Bad – Part 2

In this 3 part series we will discuss some “healthy” foods that turn “bad” when processed. Stay tuned to find out what they are, and how you can enjoy them in their natural “healthy” state…they way God intended.

Not All Nuts Are Created Equal

In this, part 2 of the Healthy Foods Gone Bad series, we will take a look at nuts. More specifically… Roasted Nuts.

We Know Nuts are…
  • Healthy
  • Nutritious
  • Good for the Heart
  • A quick ‘Tasty’ snack

…but are ALL nuts healthy?

Nuts are one of natures’ richest sources of protein. They are high in fiber and ‘healthy’ monounsaturated and polyunsaturated fats. Nuts are also plentiful in phytonutrients (organic components of plants) and antioxidants like Vitamin E. Sounds good right? So what happens to all that goodness when nuts are processed?

What Roasting Does to Raw Nuts

  • Heat damages the “healthy” unsaturated fats…
  • Oxidation occurs
  • The oils turn Rancid.

Rancid oils are Carcinogenic = Cancer-Causing

Roasted Nuts may be tasty, but definitely not worth eating around my house!

So how can you enjoy all the healthy benefits of eating nuts without the negative effects that come with Roasted Nuts?

That’s easy… Eat “Raw Nuts” that you have soaked overnight and dried in a dehydrator on very low heat. See our article on “Raw Nuts: How to Soak & Why?” for instructions and information. These nuts turn out super tasty and the soaking process unlocks the vital nutrients within the nuts…making them more available.

Do it… Your Body will Thank You!

  2. […] If you do not have a food dehydrator and cannot get one, you may be able to use a very low oven and just keep the door open. I have not done this though, as my oven will not go low enough without roasting the nuts (using too high of a heat will kill the “good for you” enzymes in the nuts and can turn the oil in the nuts rancid).
