Easy Maple-Blueberry Steel Cut Oatmeal

Steel cut oat meal is a great breakfast. It’s very satisfying, easy to make, and tastes delicious. Soaking the oats overnight makes them more nutritious and easier to digest. When serving, feel free to add other toppings if you wish….the possibilities are endless. See the end of the recipe for other topping suggestions.

  • 1 cup steel cut oats (soaked overnight in 2 cups warm filtered water + 2 Tbsp. lemon juice + 2 Tbsp. whole wheat flour or spelt flour)
  • 1 Tablespoon butter
  • 2 1/2 cups boiling water
  • 1/2 cup raw whole milk
  • Pure Maple Syrup (we like Grade B) see our store
  • Fresh Blueberries

Drain previously soaked oats in a fine-mesh sieve. Melt butter in a 1 1/2-quart saucepan over medium heat, add drained oats to pan and toast for 1-2 minutes, stirring frequently.

Add boiling water and bring to a simmer. Reduce heat and let cook for 25 minutes, stirring only once or twice to prevent sticking.

Add milk to oats and gently fold in, let cook for 10 more minutes.

Divide oatmeal among 4 bowls to serve. Sprinkle a handful of fresh blueberries into each bowl and top each with 1-1/2 to 2 teaspoons of pure maple syrup.

Serves 4.

Other Topping Ideas: Other berries, cinnamon and/or nutmeg, raisins (add during last few minutes of cooking), chopped nuts, diced apple (add during cooking), etc.
